Nanjing Zhengdian preserved vegetable juice is a specialty of Nanjing, Zhangzhou, Fujian.

After a few days, the inverted jar mouth oozed thick juice like soy sauce. After repeated boiling, the delicious preserved vegetable juice was born. Preserved vegetable juice has the effects of promoting digestion, stimulating appetite, relieving bloating, regulating qi and detoxifying.
"My son works outside, and now I plant 1.5 mu of vegetable heads to cook preserved juice, which is based on my father's food technology." Yang Liuwu said that before the founding of New China, his father, Yang Shen, founded four small two-pack "Fuxing preserved vegetable oil", each of which sold 20 cents in ocean and exported to Nanyang. At present, local farmers are rich in "Zhengdian preserved vegetable juice". Just four months ago, "Zhengdian preserved vegetable juice" was also registered as a geographical indication certification trademark approved by the Trademark Office of the State Administration for Industry and Commerce.
Xie Xinluan, an expert on literature and history in Nanjing County, said that he had visited Zhengdian Village on the eve of the declaration of the geographical indication certification trademark of Zhengdian preserved vegetable juice, and found that Zhengdian preserved vegetable juice was related to Fuxing preserved vegetable oil in the Republic of China. According to Xie Xinluan, the Annals of Nanjing County, which was compiled during the reign of Qing Qianlong, recorded: "Luo Portugal, a common name of vegetable head, can be dried into preserved fruit, and Nanjing is good at its name." According to Xu Xiake's Travels, Xu Xiake visited Zhangzhou three times. According to legend, the first time I came to Zhangzhou to drink "Zhengdian preserved vegetable juice", I didn't suffer from acclimatization and gastrointestinal discomfort. In the spring of the first year of Chongzhen, Xu Xiake entered Zhangzhou City to visit his uncle Xu Risheng, who was an official in Zhangzhou Prefecture. When his uncle went to Nanjing County (now Nanjing Town) to handle a case, he took a boat to Nanjing and inspected Xixi of Jiulong River. His uncle gave a banquet to entertain Xu Xiake. Xu Xiake was bloating that night and couldn't sleep. The next day, Xu Risheng saw that he looked tired, so he ordered the officers to take the "preserved vegetable juice from Zhengdian" and told him to take it, so that his bloated stomach would be relieved in a moment. Since then, in the autumn of the third year of Chongzhen and the late autumn of the sixth year of Chongzhen, Xu Xiake has traveled and inspected Zhangzhou twice. Every time he comes to Zhangzhou, Xu Xiake prepares "preserved vegetable juice from Zhengdian". With Xu Xiake traveling all over the motherland, the reputation of "Zhengdian preserved vegetable juice" has also spread far and wide.
