Spinach Salmon Salad
Main Ingredients for Salad:
- Spinach: a large handful, leaves only
- Red Onion: one (or a small half of a purple onion)
- Balsamic Vinegar: a good amount
- Baby Potatoes: 400g
- Smoked Salmon: 150g or so
Cheese Dressing:<
- Cream cheese: 50-60g
- Unsweetened yogurt: 100g
- Mustard: 20g or so
How to do it:
- Cut baby potatoes in half, toss them with olive oil, and bake at 165 degrees for 25-30 minutes.
- Wash spinach and drizzle a little balsamic vinegar.
- Finely chop red onion/onion and marinate in apple/red wine vinegar for half an hour.
- Cool the baked potatoes and mix them with the cheese sauce.
- Lay the spinach in a bowl, sprinkle the vinegared red onion/onion and fill with potatoes.
- Tear the smoked salmon into small pieces, spread it in the bowl and garnish with some cheese sauce.
