Yeast dissolved with lukewarm water, the flour into a large bowl, the yeast water poured into the flour, add the Sugar, mix well and well, not enough water and then add less warm water, until the flour and into a drier paste.

Put the bowl of flour with the paste on a grocery bag (or use plastic wrap to seal the mouth of the bowl), and put a glass lid (other lids are also possible) on top. lid (other lids are fine). Leave to ferment for 4-8 hours (usually 4 hours in summer, 6 hours in spring and fall, and 8 hours in winter)

With a glass lid, you can directly see the degree of fermentation of the flour.
