Zhang Zhongjing was a native of Nanyang County at the end of the Eastern Han Dynasty, and he was a big local family. The consorts and eunuchs in the imperial court killed each other fiercely, which led to the decline of the prestige of the imperial court. Heroes attacked each other for hegemony, and the peasants revolted with each other.

These have caused great harm to the people, and we know that wars are often accompanied by plagues. During the Jian 'an period, typhoid fever broke out many times in Zhang Zhongjing's hometown, and his family was originally prosperous. Because of the outbreak of typhoid fever several times, the original family of more than 200 people became dozens of people. This made Zhang Zhongjing hate both the ruthlessness of the ruling class and the harm caused by typhoid fever, and he made up his mind to overcome this disease.

He spent decades traveling around the world, deepened the research on typhoid fever, and put it into practice, and finally wrote Treatise on Febrile Diseases, a masterpiece of medical theory, to overcome this disease.

He later became an official in Changsha, and when he wanted to return to his hometown in Nanyang, it happened that winter, and all the people were frozen rotten along the way. After seeing this phenomenon, he decided to drive away the cold for the people and cure the rotten ears.

When he got home, he thought of a prescription, which was Quhan Jiaoer Soup. His practice was to cook the soup meat and drugs for dispelling cold, cut them up after taking them out, wrap them in a flour bag, and then cook them in a pot. After cooking, they can eat the original soup.

He asked people to start cooking this kind of warm food for everyone in Dongguan, Nanyang. Sure enough, after eating these things, everyone's ears were never frozen, and this kind of food was called jiaozi by our later generations, and this day happened to be the winter solstice.
