How to make pig's trotters:
Ingredients: appropriate amount of pig's trotters, appropriate amount of light soy sauce, appropriate amount of mature vinegar, appropriate amount of oyster sauce, appropriate amount of white vinegar.
1. First clean the pig’s trotters, especially the dirt between the toes. Cut half of it in the middle with a knife and set aside.
2. Add water to the pot and bring to a boil. Add a little white vinegar to make the pig's trotters crispy. Add the pig's trotters to blanch.
3. After blanch for 5 minutes, skim off the foam, take out the pig's trotters and put them into a basin.
4. While hot, add more light soy sauce, appropriate amount of oyster sauce, and mature vinegar to the pig's trotters, stir evenly, and marinate for about 50 minutes.
5. Add water to the pot, add light soy sauce, mature vinegar, and oyster sauce, bring to a boil over high heat, add the pig trotters, turn to low heat, cover the pot and cook for 1 hour, then turn off the heat and soak for half an hour. Let it fully absorb the flavor and then eat.
