1. Wash the duck and scald it with boiling water for three times! (This step must not be omitted, otherwise the duck skin will not be crisp) Then take an empty beer bottle and fill it with water, and buckle the duck on it.
2. Mixed roast duck sauce: five spoonfuls of honey, five spoonfuls of water and one spoonful of vinegar, evenly.
3. Brush the prepared honey juice evenly on the duck. Under normal circumstances, it should be aired outside for four or five hours, but I used a hair dryer when I was impatient!
4. This is a picture dried with honey. Friends who have time will leave it outside to dry for four or five hours until the skin feels inelastic.
5. Cut the apple into pieces and stuff it into the duck's stomach, and fill the unfilled place with whole wheat bread dipped in water. Wrap the duck's wings and legs with tin foil to prevent them from burning. Preheat the oven at 200 degrees for five minutes, spread tin foil on the baking tray and put a little water. Put the duck breast on the grill, set the oven to 180 degrees, bake for 40 minutes, and then bake it upside down for 20 minutes. Finally, turn back to the duck breast side and bake for 15 minutes to see if there is uneven heating. A crispy and attractive Beijing roast duck is coming out!
6. Take out the roast duck, cool it slightly and slice it.
7. Lotus leaf cake: pour 80-degree boiling water into flour to make cotton wool, and then add a little cold water and flour. Cover with cloth and wake for 30 minutes, then put more water in the steamer to boil. Make small doses of waking noodles, put a little oil on the small doses (don't dry the flour like rolling the dough), then roll them into pancakes with a rolling pin, put one pancake in a boiling steamer, put the second pancake in one minute after it becomes transparent, put them one by one, and continue steaming for five minutes after the last one is finished. Lotus leaf cake succeeded! Just open the lid and wait until it is a little cooler before separating it piece by piece. If you can't finish eating, just steam a little the next day.
