Flavor characteristics of printed Qingming dumplings
Printed Qingming dumplings are snacks in Tomb-Sweeping Day in the south of the Yangtze River. The unique feature of printed Qingming dumplings is to color the dough with wild vegetables that only existed before and after Qingming, including wormwood, wheat straw, Hu Hu Cai, rat weed, chrysanthemum and so on, and steam the lustful glutinous rice flour into bean paste stuffing, sesame stuffing, vegetarian stuffing and so on. The prepared green dumplings are green in color, and smell like a faint grass. They are long and soft and not sticky, as if to eat the whole spring in your mouth. You can directly put the dumplings on the cage, or you can use a mold to imprint the patterns and then put them on. The latter is called printed green dumplings or printed Qingming dumplings.
