5 pounds of fresh red pepper?

Soak the soybeans for 3 hours in advance, then bring to a boil over high heat and simmer over low heat until Until the noodles are cooked. You can start cooking the beans while chopping the peppers, because it will take more than an hour to chop 5 pounds of peppers. The more chopped the pepper is, the better it will be cooked. You will understand why I say this when you get to the cooking stage. Be sure to wear disposable gloves when cutting. If you didn't wear them before, your hands would be burning and uncomfortable for a long time after cutting. No matter how you wash it with clean water or ice water, it is useless because the chili pepper liquid has penetrated into the skin.

It is best to use a larger wok to facilitate stirring later. Pour in half of the oil first, then when it is 6 minutes hot, pour in the peanuts and fry over medium-low heat to prevent the peanuts from getting too old. If the peanuts are fried too much, they will taste bitter, so use a slotted spoon to gently push them. It's almost done when the color turns deep red, turn off the heat, take it out and set aside. Then pour in the remaining oil. Why do you have to pour the oil in two steps? This is my experience after pouring the pot. The first time I made the sauce, I didn't know how deep it was. I took out the rice and poured in the chopped chili peppers. Because the oil is hot and the fresh chili peppers have a lot of water, a lot of oil will come out at once. So I slowly figured out how to refuel in batches, and never missed it again.

Boiling the chili peppers is the most critical step in the entire process of cooking the sauce. There is no shortcut, just time, and no corners should be cut at all. If you don't have enough time, the chili sauce will spoil immediately. It will be difficult to preserve it in two months, let alone a year.

After 1 hour and 40 minutes of cooking over medium-high heat, half of the freshly chopped chili peppers have been cooked, and all the water has been lost. Don’t feel bad. The next step is to pour in the water-controlled soybeans. Why put the soybeans first instead of peanuts? This process takes 20 minutes, then add salt, sugar, and white wine, and continue to stir evenly. When these ingredients are melted, add peanuts and sesame seeds and continue to stir.
