The Hometown of Chefs Lantian County, Shaanxi Province
Lantian county has a long history of cooking culture, and famous chefs come forth in large numbers. Lantian chef cooks the more famous hotels in Xi 'an. When Eight-Nation Alliance invaded Beijing in the late Qing Dynasty, Cixi fled to Xi 'an, and Shi Shaoxiang, the magistrate, recommended Li Songshan, a native of Lantian, as his chef. Li cooked ten dishes, such as "Phnom Penh Cabbage", which were delicious and fragrant, and were deeply appreciated by Cixi. Cixi then ordered Li to be the palace chef. On the eighth day of April in Xin Chou's reign, on the birthday of Lafayette, Cixi, who lives in the south courtyard of Xi 'an, ordered a hundred officials to celebrate their birthday. The famous chef Hou Zhirong from Lantian made five phoenixes to celebrate longevity, eight immortals crossing the sea, the Goddess Chang'e flying to the moon and oil-soaked cakes, which made Cixi full of praise. After that, local officials hired Lantian chefs to cook, and they were proud of it. At that time, there was a mantra circulating in the society: "Look for Lantian Township Party, big and small yamen kitchen". In the 1960s, among the thirteen cooks named by Xi 'an Municipal Government for the first time, there were seven Lantian chefs. In 1978, the Shaanxi provincial government awarded ten "senior chef", four of whom were born in Lantian. About tens of thousands of Lantian chefs are active at home and abroad, forming a unique food culture phenomenon.
