Wine glasses come in many shapes and sizes, but one rule of thumb is that the glass should be large enough so that there is enough room to avoid spillage when shaking the glass, and the aromas can be emitted and come together in the glass.
Materials
Crystal and glass are the main materials used to make wine glasses, and there are subtle differences in aroma and flavor between crystal and glass, mainly due to differences in the roughness of their surfaces. Through a microscope, you can observe that the surface of crystal has more dimples than glass and hangs more, and when used to hold champagne, the bubbles will perform better, while the small dimples on the walls of the glass retain these bubbles more permanently, which is where the soul of champagne lies.
Wine by the glass
How full is the right amount of wine to pour? When dining in a restaurant, if you see a waiter refilling the glass in front of you, don't take it as a sign of good intentions, it just means that the restaurant has a very lackluster concept of wine. In fact, only champagne can be poured to the full. Drinking if white wine, a pour half a cup on it, if it is red wine, a quarter is the appropriate amount, pouring too full will not be able to appreciate the wine's aroma and color.
