10 to 12 clams (canned is fine)
7 to 8 slices of bacon

Step 2Cut the bacon into 2 plates, one with sliced meat (to put in the soup) and the other with diced meat (to put on top of the soup after making the soup)
Step 3Heat up the pan, don't put any oil in it, and put in the sliced bacon directly (to deep fry the bacon out of the oil)
Step 4The sliced bacon doesn't need to burn very much, just pull it out and put it on top. The bacon slices don't need to be fried, but put the bacon meat into the frying pan and fry it like lard crumbs, and then drain the oil.
Step 5Like this almost.
Step 6After the bacon is removed, add the celery and onion and sauté slowly over medium heat.
Step 7When the bacon is slightly soft, put in the flour, not too much at once, a little at a time. If you like it thicker, you can put it in a few times. If you like it thinner, put in less.
Step 8After the flour is blossomed, you can put in a spice called thym (pronounced like time), if you don't have it, you can omit it here.
Step 9Add the corn kernels and thym to the pan and continue to stir-fry.
Step 10After this step, you can put in the clams, which I didn't put in their shells. You can use fresh clams if you like. But the clams need to be cooked first, after cooking the soup to remove the sand reserve.
Step 11Add the clams and the clam stock. Add the clams and the clam broth. (Add water if you don't have enough clam broth.) You can dice the clams or put them in whole.
Step 12Put in the bacon (or leave it out if you don't like it. Authentic clam chowder doesn't have that much bacon in it)
Step 13After the soup boils, put in the heavy cream, or milk if you don't have it. It's a one-glass measure, or as much as you like.
Step 14Add black pepper and salt (if you put bacon meat slices, we recommend not to put salt, bacon itself is relatively salty).
Step 15Finish with parsley.
Step 16Cut some bread if you like mianbao. Toast it in the oven (I used ko toast mode for 5 minutes)
Step 17Serve it in a bowl and sprinkle it with diced bacon. It's done.
