Two hairtail, half onion, six slices of ginger, one head of garlic, appropriate amount of pepper, three star anise, appropriate amount of fennel, three pepper and appropriate amount of starch.
Step 2 Practice steps
Soak hairtail in soft water, wash, gut, cut into sections, and control water for later use. Cut onions, ginger and garlic in advance.
Prepare a proper amount of starch, put oil in the pot and heat it to 80% heat. Coat each hairtail with starch evenly, fry it in a pot until both sides are golden, and take it out for later use.
Heat an appropriate amount of oil in a pot, add pepper, star anise, fennel and dried chili, stir-fry over medium heat, add onion, ginger and garlic, stir-fry until fragrant, add 2 tablespoons of white sugar, 3 tablespoons of soy sauce, 2 tablespoons of oyster sauce, 7 tablespoons of 1 tablespoon of soy sauce and vinegar, and stir-fry over high heat until fragrant.
Put hairtail in a pot, stew for 3 minutes on medium heat, add boiling water, add appropriate amount of salt after hairtail is not used, stew on medium heat until the soup in the pot is thick, and then turn off the heat.
