The main producing areas of domestic bird's nests are located in Jianshui Cave, Yunnan and Hainan Island, which mainly produce cave swallows and grass swallows. Because they are close to the Tropic of Cancer, bird's nest picking has strong seasonality, and the output is scarce. The quantity is less than one ten thousandth of the global bird's nest production. It is expected that domestic bird's nest production will not change significantly in the next few years.

At present, the main product forms of bird's nest are dry bird's nest, ready-to-eat bird's nest and freshly stewed bird's nest. Different types of bird's nest processing processes are different, as shown in the figure below. According to the technological development route, the technology of the bird's nest industry is now divided into basic technology, deep processing technology and biotechnology: basic technology mainly includes cleaning and picking, soaking, stewing, etc.; Deep processing technology mainly includes sterilization packaging, nutrition maintenance, flavor mixing, etc.; biotechnology uses enzymatic hydrolysis technology, extraction, separation and other means to deeply process bird's nest, which is widely used in food, medicine, cosmetics and other fields.
