10 pounds of mustard greens
25 grams of dried chili peppers
20 grams of peppercorns
8 anise star anise

How to make pickled mustard seeds ?
Wash and shred the mustard greens, and marinate them in water with a good amount of salt. Cut the ginger into julienne strips and the scallions into pieces.

Pour oil in a pan, add chili peppers, pepper, star anise, ginger, green onion and fry on low heat.
After frying, pour in soy sauce, balsamic vinegar, dark soy sauce, rock sugar and pure water. Turn off the heat and simmer for 5 minutes.
Cool the soup and set aside.
