Ingredients: 4 red-headed fish;
Accessories: onion 10g, garlic 10g, ginger 5g, sugar 10g, soy sauce 10ml, white wine 5ml, vinegar 5ml, water 200ml, coriander 2g and peanut oil 25ml.

Viscerate the red-headed fish and wash it.

After the wok is heated, add proper amount of peanut oil, first add the red-headed fish and fry on both sides.

Add some white wine.

Stir-fry other accessories except coriander.

Bring the fire to a boil, turn it to a small fire cover and simmer for 10 minutes, then collect the fire juice and turn off the fire.
