Cold shredded potatoes
Ingredients:
1 potato, 1/4 carrot, small pieces of ginger, 1 to 2 spoons of chili powder, 2 balsamic vinegar spoon, 1 and a half spoons of light soy sauce, 1 tsp of salt, 2 corianders
1/2 bowl of peanuts, appropriate amount of cooking oil
Method:
1. Add peanuts to cold oil in a cold pan, fry over low heat and take out.
2. Peel potatoes and carrots and cut into thin strips.
3. Rinse the potato shreds several times to remove excess starch.
4. Pour an appropriate amount of water into the pot and bring to a boil. Add the shredded potatoes and carrots into the pot and cook for 2 minutes.
5. After cooking, raise the strainer and drain the water.
6. Soak the shredded potatoes and carrots in cold water and set aside.
7. Put 1 spoon of minced ginger and 1 spoon of chili powder in a bowl, heat the oil in the pot and pour it into the bowl.
8. Add 1 tsp light soy sauce, 2 tsp balsamic vinegar, 1 tsp sugar and 1 tsp salt and mix well.
9. Add coriander to the shredded potatoes and carrots, add fried peanuts, pour in the sauce and mix well.
