honey is produced in most areas of the Yangtze river basin and the yellow river basin in China, mainly in Henan, Shanxi, Shandong, Hebei, Zhejiang, Gansu, Guangdong, Fujian and so on. Honey is the secretion of bees. According to the different kinds of honey plants, the honey secreted by bees will be different. The common types of honey are Sophora japonica honey, jujube honey, litchi honey and Vitex negundo.

There are color differences among honey, which can be divided into seven grades: water white, extra white, white, extra light amber, light amber, amber and dark amber.
