The practice of Fuding sliced meat:

Ingredients: pork tenderloin 500g (pork tenderloin is preferred, lean pork is used if it is not available) and sweet potato starch 350g.

Ingredients: Xiaomi spicy, ginger, coriander, disposable laver, chives, 5g baking soda.

Seasoning: water, pepper, white vinegar, salt.

-Start making-

①: Weigh pork tenderloin, sweet potato starch and edible baking soda with an electronic scale and put them in a bowl for later use. (Note that baking soda is the key material, which will be explained later).

②: Wash pork tenderloin and mash it in a cooking machine. Wash millet, remove pedicle, cut with oblique knife, peel and slice ginger. Wash coriander and leek and chop them for later use. Note that students who are not in trouble can also chop meat by hand, which will taste better.

③: Next, enter the key step, take a clean stainless steel basin, press the basin with your left hand, put on disposable gloves with your right hand, grab the minced meat and pat it up and down until it reaches a height of about 20 cm, and pat it repeatedly for about 20-30 minutes until the minced meat is not easy to spread. Be careful, don't be too tired here. Try to beat for more than 20 minutes, because whether this piece of meat can be cooked delicious depends on the beating steps.

④: Start seasoning. Add 2 teaspoons of salt and 5g of baking soda to minced meat, and knead quickly 1 min until uniform. ⑤: Add 1/3 sweet potato starch (about 1 16g) into the beaten meat sauce, rub it back and forth with your hands, then add the second amount of 1/3, and add all sweet potato starch in three times and grab it evenly. When it is dry, you can add about 70g. -(note that it is best to add sweet potato starch, and it should be added in stages, which will be explained later).

⑥: After the above steps, you can start making soup. Add enough water to the pot, add a few slices of ginger, and cook over high fire until it is fragrant.

⑦: After the water is boiled, turn to low heat, spread the beaten meat sauce on a large plate, scrape a small piece into the pot with a knife or spoon at a time, and so on until all the meat sauce is dug into the pot, then turn to high heat to boil, and cook until the meat pieces become bigger and surface, and turn off the fire for use. Note, turn off the fire before serving the sliced meat, and turn on the fire after serving, which will be explained later.

⑧: Take out the bowl and add appropriate amount of salt, 2 tsps of white vinegar, pepper 1 tsp, a little disposable laver, and chopped millet is spicy. Note that all seasonings are added directly to the bowl, not to the soup.

Tips:

(1) To make Fuding sliced meat, the ratio of meat to starch is very important. It is suggested to add 350 grams of sweet potato starch per catty of minced meat.

(2) To make Fuding sliced meat, you must beat the minced meat first, so as to ensure that the cooked sliced meat is delicious (remember to beat it with gloves, otherwise it will stick and you will doubt your life).
