Basha fish, native to Mekong River in Vietnam, is a national second-class protected species in Vietnam. Because of its delicious taste, high nutritional value and raw material of high-grade cosmetics, this fish has become a major aquatic product exported from Vietnam to the United States and other markets.
Its fish itself has a strong earthy smell, so steaming or stewing soup is not recommended. Most Basha fish in western supermarkets appear in the form of frozen fillets (fish without scales and thorns, whole piece of fish). It is easier to cook with wine and salt before cooking, and it can be used for braising in soy sauce, rinsing hot pot or making boiled fish.
