1. Remove the toes and nails of the pig's feet and scrape off the fluff;
2. Peel and wash ginger;
3. Boil the boiling water pot, add pig's trotters to cook, remove and cool, and then chop;
4. Ginger is cut into small pieces according to vertical stripes and dried for later use;
5. Heat the wok in medium heat, stir-fry the ginger until it is slightly red, add oil and stir-fry it evenly, add white vinegar and pig's trotters and boil it together, then add refined salt and brown sugar until the sugar dissolves;
6. Use a big earthen pot, pour all the materials into it, wait until the pig's feet are soft, pull them away from the fire and park them for one night;
7. Cook it again the next day until the pig's feet are cooked, and you can eat it.
