What is melon gum?
Melon sauce is a kind of maltose.

There are two isomers, α -and β-,and the ratio of α -and β -maltose in aqueous solution is 42:58. The molecular formula of crystalline β -maltose containing one molecule of water is β-c12h22o11H2O. If crystal water is removed, β -maltose will be converted into α-maltose, so it is not easy to obtain anhydrous β -maltose.

Commercially available crystalline maltose is mainly hydrous β-maltose, of which 5%- 10% has been converted into α-maltose. Maltose can be made into maltose syrup, which is widely used. Used in various fields of food industry, such as solid food, liquid food, frozen food, colloidal food (if frozen) and so on. Mainly used for processing caramel sauce color, candy, fruit juice beverage, wine making, canned food, bean paste and soy sauce.
