Cleaning method of scallop:
1, first of all, we want to buy scallops. The selection is very simple, which is similar to the selection of other shellfish. Generally, the shells that are closed tightly are live scallops, not to mention the ones that are tightened immediately when touched by hand. On the contrary, the shell is wide open, and the nature that is unresponsive when touched by hand is dead.
2. For the fresh scallops bought back, wash the sediment on the shells with clear water first.
3. Use a knife and recommend a knife for western food. Put the knife into the shell, split the shell in two, and at the same time cut off the shell meat. At this point, you will see that both sides of the shell have shellfish meat.
4. Eat the knife again and stick to the bottom of the shell to completely remove the shellfish. In this step, the knife must be close to the bottom of the shell to pick out the complete shell meat.
5. Separate the shellfish from the shells. Let's clean the shellfish first, and use a knife to remove the internal organs of the shellfish, that is, things that look black. Then put the whole shellfish into a large bowl. Add a little salt, soak in salt water for two or three minutes, and rotate the shellfish clockwise with chopsticks. The purpose of this is to make the sediment on the surface of the shellfish sink to the bottom of the bowl.
6. Take out the shellfish, just pour out the water in the big bowl, put a proper amount of raw flour in the bowl, then put the shellfish into the bowl and gently wash the shellfish with your hands. Doing so will completely take away the residual sediment in shellfish.
Note: This is not all done yet. Clean the most hidden part: continuously squeeze the red meat of scallop from the top to the central axis, and squeeze out the dirty things in the viscera of scallop for several times until there is no black substance, as shown in the figure:
Finally, wash it with clear water again, and the shellfish will be processed.
7. If we make garlic vermicelli or steamed scallops in soy sauce, we need shells as the base, so we can use a fine brush or toothbrush and then brush off the sediment on the shells completely.
8. In this way, the scallops are cleaned. Eat what you want, and there will never be sediment to make trouble.
Tips for cleaning fans:
Sediment spit out during scallop washing may be sucked in. In order to prevent this phenomenon, when soaking, the quilt can be placed in the filter basket, and then the filter basket is placed on the basin to keep the filter basket at a distance of four or five centimeters. In this way, the sand spit out by shellfish will sink to the bottom of the basin and will not be sucked back by shellfish.
