Raw materials, pork, about 4 pounds. Two pieces with skin, two pieces of cloth with skin.
Pork.
Seasoning: soy sauce 100g, anise, pepper, five spice powder, cumin each moderate, white wine 50g, salt a small spoon. Put all the seasonings in a pot and mix well.
Put the meat in the seasoning sauce and spread evenly on the meat to marinate.
I ended up putting the sauce in a plastic bag with the meat and turning it over once in two or three hours to marinate all day.
The marinated meat was then put directly onto a string and hung on a shaded balcony to dry for about a week. I dried it for 9 days a ****.

The ground looks like 5 days. Didn't feel a big change.
Last day look. Basically didn't feel a big change, just a little oily in the lower part of the meat.
Steamed a piece on the pot and it tasted good and sold satisfactorily. Just a little salty. I should have added some water to the marinade or reduced the amount of salt.
And made bacon stewed potatoes, basically no salt, very tasty.
