Ingredients:
1500g high-quality high-gluten flour, 15g baking powder, 7.5g food powder, 30g refined salt, 4 eggs, 2500g salad oil.
Preparation method:
1. After sifting the flour, add baking powder and mix well. Pour water into the dough mixer, beat in the eggs, add refined salt, cooking powder and 50 grams of salad oil. Turn on the machine and mix at low speed until the water becomes turbid and slightly bubbles, then add the flour mixed with baking powder. After the flour and water are mixed into a dough, switch to medium speed and mix until the dough is smooth and soft.
2. Dip your hands with a little salad oil, scoop out the dough from the dough mixer, place it on a greased dough table, and roll it into a rectangular shape. Then use your fists to pound the dough piece. When the piece becomes larger, fold it into 2 to 3 layers and pound it. Repeat three times according to the method, then fold the beaten dough neatly and put it into a stainless steel plate, cover it with a wet towel and let it sit for about half an hour.
3. Sprinkle the other end of the dough with flour, use a dough knife to take a small piece of dough from the stainless steel plate, place it on the dough, use both hands to stretch it, and then roll it out with a rolling pin. Make a long strip of dough 8 cm wide and 1 cm thick, and then cut it into 2.5 cm wide strips with a knife.
4. Pour salad oil into the pot and heat it until it is 60 to 70% hot. Take a strip and brush a little water on the non-knife edge side with a small brush, then place another strip overlapping (the knife edge side is on both sides) ). Use a thin wooden stick to press in the middle of the billet to make the two billets stick to each other, then hold the billet with both hands, gently stretch it, twist the billet twice with your right hand, and then put it into the oil pan while pulling. Put the middle part of the strips first, then put the two ends into the oil pan, fry them while flipping them with chopsticks, and fry them until they are plump and golden in color, then remove from the pan and drain the oil.
