I bought two pig's feet, dried peppers, ginger slices, spices, rock sugar and so on.
Step 1: First, treat the trotters, chop them into pieces, wash them with clean water, pour clean water into the pot, put the trotters in cold water, put some ginger slices and blanch them with cooking wine.
Step 2: after boiling, skim off the floating foam and wash it in cold water.
Step 3: pour a little oil into another pot, add a few crystal sugar and stir-fry the sugar color. Stir-fry slowly over low heat until the sugar melts and becomes Bordeaux bubbles. Then put the trotters down and stir fry, add some cooking wine and continue to stir fry.
Step 4: Put the dried pepper, ginger slices, star anise, cinnamon and fragrant leaves down and stir fry together.
Step 5: Season with some soy sauce and color with some soy sauce.
Step 5: After frying, add a bottle of beer, bring to a boil, add some salt and stir fry.
Step 6: stir fry evenly and put it into the rice cooker. Do not add water. I use the high-pressure version, which doesn't absorb water. Just press for 35 minutes.
Step 7: After opening the lid, try it with chopsticks. It can be easily inserted. It smells good!
Step 8: Pour the stewed pig's trotters into the pot to collect the juice and take out the seasoning.
Step 9: The juice is almost collected. Add some garlic leaves and you can cook. It tastes soft, rotten and salty. Very delicious. I ate several pieces in a row. Like a friend can try!
