Canalei (French: canelé) or "Kelilu" is a small French pastry with a thick brown crust full of caramel. This snack is small in appearance, and it is a layered cylinder about 2 inches high. It is a specialty of Bordeaux, France, but it can often be found in Parisian pastry shops. Because of its appearance, it has the good name of "Angel Bell" in Japan.
Eggs, milk and flour are used in the production, and rum and vanilla are added to flavor. The mushy jelly is baked in the mold, which makes Canalei have a caramel shell and a soft and porous inner lining.
