Steps
1. Wash the anchovy meat
2. Peel the potatoes
3. Cut the anchovy and potatoes into large pieces
4. Peel the garlic
5. When the pan is hot, add oil. When the oil is hot, add the anchovy meat and fry slowly over low heat until the fish meat turns white.
6. Cook in white wine and vinegar, add garlic cloves and ginger slices
7. Heat water, add salt, star anise, red pepper, cinnamon, light soy sauce, and bring to a boil over high heat , simmer over medium-low heat until the juice is reduced
8. Remove from the pot
Tips
Anchovy tendons are very nutritious, so don’t throw them away.
