Generally speaking, dried tofu is mostly square, about 1 cm thick, chopsticks thickness of about 0.5 cm or so.
Take a pair of bamboo or wooden chopsticks, not too new Oh, so as not to waste.
Place the two chopsticks parallel to each other, close together on either side of the dried tofu.
Use a knife to cut diagonally across the square (i.e., cut diagonally), stopping when the knife lands on the chopsticks and cutting one side of the tofu at about 0.5-centimeter intervals; turn the tofu over and continue cutting as described above, but with the knife cut at a 90-degree angle, which is the equivalent of marking the tofu with an "X".
After you've cut both sides, you'll have a Demoiselle flower knife.
The radish can also be cut like this to make Demoiselle radish.
As for the depth of the cut, it depends on the ingredient being cut, and there are also special wooden molds for mass production.
