In the morning when the stomach and intestines are not yet fully open, eating a bowl of noodle paste is really a relief to the stomach.
The toppings are also essential, the most classic is Quanzhou's unique "vinegar meat" (which will be discussed below), and there are also common fritters, shrimp, squid, razor clams, duck intestines, oysters, fat intestines, liver, chicken gizzards and so on, each time you can choose two or three of your favorite added to the noodle paste. And last but not least, a pinch of white pepper. After a few days of eating, my favorite topping is the fritters. A small dish of cubed fritters for a dollar, very crispy, soaked into the soup for a while and then tamed properly, soaking up the soup fritters is wonderful! (I love this way of eating in Minnan, in Xiamen to eat duck congee and oil noodles are equally delicious)

Qiaotou Vinegared Pork is a small stall on the Yingjin Bridge that has been in business for 20 years and has become the voice of vinegared pork. The day I went there, there was a sudden drizzle, and we all waited in the rain for the vinegar meat to be fried. I bought 10 yuan of vinegar meat, put in a plastic bag and hung on the handlebars, while riding the bike the aroma is coming out. Haisi Jinfeng Authentic Lantern RoundNext to Donglai, there is another long-established restaurant that sells Lanterns.
The yuanxiao here is different from Shanghai's single-filling yuanxiao, which is filled with peanuts, sesame seeds, scallions and lard, and is a calorie bomb. But it's really good. After "dry stirring" and "wet stirring," the "bomb" is molded, and finally the glutinous rice flour is "rolled" to create a lovely ball of rice. Tips for Shopping and EatingThe core area of Quanzhou is in the area of West Street, East Street and Tumen Street, where there are not only a concentration of characteristic buildings, but also a lot of snacks. For example, Hao Cheng Cai Steak House, Stann's Ginger Mother Duck, and Hou A-Pa's Pork Dumplings are all located in this area. When choosing accommodation, you can consider staying in the neighborhood.
Quanzhou is halfway between Fuzhou and Xiamen, each about an hour away by train. Despite the close geographical proximity, the difference in food and drink can be clearly felt. Compared to Fuzhou's traditional (e.g. eel skin soup, which I can't quite get enough of), Quanzhou's snacks are much more varied and open in flavor. There may be some snacks not written here, possibly in Xiamen or the next Fuzhou.
Quanzhou is so low-key, prices are naturally not expensive. Accommodation is about one-third cheaper than in Xiamen; these snacks written above are more than two dozen prices; most of the attractions in Quanzhou also do not charge admission, even if it is the Kaiyuan Temple of the Tang and Song dynasties such as the ancient buildings are no exception. The inside of the temple is very quiet, and there are people playing chess, this season look up to see trees full of longan, really a southern city to the northern girl's little surprise.
If you are planning a Spring Festival vacation, you can take Quanzhou as an alternative. Even if you feel aesthetic fatigue from seeing too many ancient buildings, you can go back and forth to Xiamen on the same day, or go to Shishi (where there is a lot of seafood by the sea), Chongwu Ancient City, Yongning Ancient City, and so on, not far from Quanzhou. Or the other way around, a two-day trip in Quanzhou is also a good choice, at least to avoid the crowd.
