How to preserve green onions in winter
Onion is an indispensable vegetable in life and can play a very full role in cooking. The food we eat and the taste of rice are all fried with onions. The weather is dry, and the newly bought onions dry easily. At this time, preserving onions is a key issue. So how to preserve onions in winter to keep them fresh?

(1) Shelf storage method, in the open air or in a shed or indoors, a storage rack is built with wooden poles or steel. Bundle the collected and dried green onions into a bundle of 7 ~ 10 kg, and pile them on the shelf in turn, leaving a gap in the middle to facilitate ventilation and prevent rot. Shelves placed in the open air should be covered with plastic film to prevent rain and snow. During storage, the bales should be opened regularly for inspection, and the hot and deteriorated plants should be removed in time.

(2) Ground storage method: spread sand with a thickness of 3-4 cm on the flat ground in the leeward, put the dried and tied green onion roots down on the sand with a width of1~1.5 m. After stacking, cultivate sand with a height of 15 cm around the green onion roots. Cover with straw curtain and plastic film for rain protection.

(3) Trench storage method: dig a shallow trench with a depth of 20-30 cm and a width of 50-70 cm in a cool and ventilated place. Bundle the selected sun-dried green onions into bundles of about 10 kg. After the ditch is filled with enough water, plant bundles of green onions into the ditch, bury them with soil, and surround them with corn stalks for ventilation and heat dissipation. Before the temperature drops, cover it with straw curtains or corn stalks.

(4) Pit storage method: after harvesting, dry in the sun for several days, bundle the green onions into bundles of about 10 kg, and vertically discharge them in a dry sunny place to dry. When the temperature drops below 0℃, it is stored in the cellar. Keep the temperature in the cellar at 0℃, and pay attention to heat and moisture protection.

(5) Cold storage method: Bundle the scallions without diseases, insects and injuries into bundles of about 10 kg, put them into boxes or baskets, and put them into cold storage for stacking and storage. The temperature in the warehouse is 0 ~ 1℃ and the relative humidity is 80% ~ 85%. During storage, it should be checked regularly, and rotten green onions should be removed in time.

(6) Slightly frozen storage method: shallow trench with depth of 10 ~ 20cm and width of 1 ~ 2m is dug in the north side of the east and west walls. Sun-dried green onions are tied into bundles of 7 ~ 10 kg and stored vertically in ditches. At the beginning of storage, the upper part of the green onion bundle is open, and it is turned 1 time every week to dry all the green onion leaves. When the weather is cold and the green onions are slightly frozen, soil the green onions and cover them with a straw curtain.

For many friends in northern and southern regions, it is necessary to pay attention to the above methods to preserve green onions. If there is no such method, we can preserve green onions with plastic wrap, but we should pay attention to the fact that green onions themselves cannot be separated from boiling water and placed in a relatively humid, heat-proof and moisture-proof place.
