Spaniards have been curing pork products and putting them in sleeves for long-term preservation (in Spanish, the common term for curing pork in sleeves is embutidos, which comes from the Spanish word "filling").
Explorers and conquerors used Spanish sausages and other kinds of empdido as part of their food (they are very portable protein, and do not need refrigeration).
Pepperoni is very hard, and it is made of sweet pepper or Chili powder (since Mexico conquered Spain, Spaniards began to use a mild mixture of sweet pepper and pepper-a crop in the New World-to help deal with pepperoni). There are many kinds and colors of Spanish sausages, and white wine or brandy will do. Spanish sausages are like salami, because they can be sliced and eaten directly.

Italian sausage is raw, without salt. It tastes more aggressive. Its taste and color come directly from pepper, vinegar and various spices, and there are only two main ones: red and green. The latter is less common and comes from toluca. Green meat can be found in toluca and Yecapistra near Mexico City. This color is made of peppers and green tomatoes.

You can't cut salami (unless you want to die). You can think of it as ground beef-pour it out of its sheath and cook it in a pot. It is as greasy as bacon, so you usually don't need any oil (in fact, depending on the way it is cooked, you may need to drain some oil after cooking, which is why many Mexicans cook it alone, especially when we try a new supplier for the first time).
Once cooked, you can eat it directly, or mix/sprinkle it on anything. Pepperoni is usually eaten with eggs as part of breakfast, or as an "addition" to stews, such as Frijoles charro. Because it has a strong fragrance, if the food is weak, it can really "make things more interesting".
