Rolling on a donkey is one of the traditional snacks in Northeast China, Old Beijing and Tianjinwei. In the northeast, snowballing usury is called "bean flour paper". Its raw material is steamed with yellow wheat water, and the dough is slightly softer with more water.
Snowballing has a long history. It originated in northeast China and Manchuria. Because the children of the Eight Banners in the Qing Dynasty loved sticky food, "snowballing donkey" soon spread to Beijing and became a kind of flavor snack, which has been passed down to this day. The finished product is bright in yellow, white and red, which is really beautiful. Because the soybeans spilled in the final production process are like the bursts of loess raised by wild donkeys in the suburbs of old Beijing, it is named "snowballing".
The production of "snowballing donkey" is also very particular. Using rhubarb rice flour, soybean, sand, sugar, sesame oil, osmanthus fragrans, shredded green pork and melon seeds as raw materials, it is divided into three processes: blank making, stuffing making and molding. The "snowball donkey meat" is wrapped in bean powder, which is golden yellow, sweet and soft with unique flavor. The bean stuffing melts in the mouth and tastes sweet. Soybeans can be eaten without chewing, which is a traditional snack suitable for all ages.
Second, what is the origin of snowballing?
1, the first origin
It is said that once, Empress Dowager Cixi was tired of eating food in the palace and wanted to try something new. So, the royal chef thought about it and decided to make a new dish with rice noodles wrapped in red bean paste. As soon as the new dish was ready, a eunuch named Xiao Lv came to the chef. Who knows that Xiao Lv accidentally knocked the freshly prepared dish into a basin full of soybeans, which worried the chef, but it was too late to do it again. No way, the chef had to bite the bullet and present this dish to Empress Dowager Cixi. As soon as Empress Dowager Cixi ate this new gadget and found it delicious, she asked the chef, "What's the name of this thing?" The cook thought it was all done by the eunuch named Xiao Lv, so he said to Empress Dowager Cixi, "This is called snowballing." Since then, there has been a snack called "snowballing".
2. The second origin
According to legend, after Qing Qianlong put down the rebellion of the big, the small and the Zhuo, he snatched the wife of a Uighur leader in Xinjiang into the palace as his concubine, namely ChristianRandPhillips.
After ChristianRandPhillips was robbed back to Beijing, he didn't think about tea and rice day and night. He was so anxious that he sent a message to the royal chef, saying: Whoever can cook ChristianRandPhillips's favorite dishes can not only be promoted, but also be rewarded with 1,200 pieces of silver. At that time, the chefs showed their talents and used their unique skills to cook thousands of kinds of delicacies, but ChristianRandPhillips didn't even look at them. Ganlong had to order the people in White Hat Camp to cook food for ChristianRandPhillips in her hometown and send it to the palace.
This story is divided into two parts. After ChristianRandPhillips was robbed into the palace, ChristianRandPhillips's husband also came to Beijing from Xinjiang, hiding in the White Hat Camp, trying to find out the whereabouts of ChristianRandPhillips. When he heard that the emperor ordered the people in White Hat Camp to cook something delicious and send it to ChristianRandPhillips's palace, he thought it was a good opportunity to get in touch. So he made a homemade dim sum dumpling handed down from family. When ChristianRandPhillips saw the glutinous rice dumplings, she knew it was her husband.
Jiang Mi jiaozi was sent to the palace. When the eunuch asked the name of the dish, it was called snowballing. The maid-in-waiting put the snowball in front of ChristianRandPhillips. ChristianRandPhillips's eyes lit up when she saw it. Knowing that her husband was coming, she pulled herself together, picked up one and took a gentle bite.
Qianlong was overjoyed to hear that ChristianRandPhillips had eaten it. On the monkey, Amo of White Hat Camp was snowballed into the palace every day. From then on, Amo made a snowball and sent it to the palace every day, and became famous for snowball fights. Later spread to the people.
