Before frying kelp, wash kelp and shred it, then boil a pot of boiling water. After the water boils, put the kelp into the pot, simmer until the kelp becomes soft, remove it and rinse it with cold water for later use.
Then put the right amount of oil in the wok. When the oil temperature is 70% hot, add shredded ginger and stir-fry until fragrant. Then add the cooked kelp and stir fry for about five minutes. Then add the right amount of water, salt, chopped green onion and cooking wine. Cover the pot and cover it slightly. When the kelp is soft, it can be cooked.
Sprinkle some sesame oil, vinegar and minced garlic before serving.
You can also put minced garlic and washed dried Chili (shredded) on a kelp dish, heat sesame oil, pour it on minced garlic and dried Chili, and then decide whether to put vinegar according to your personal taste.
