(1) Preparation materials: pork bone, yam, red dates, mushrooms, ginger, shallots, salt and cooking wine.
(2) Slice ginger, cut shallots into sections, peel and steam Chinese yam, add appropriate amount of water, and mash it with a cooking machine. Cut the mushrooms with a cross knife for later use.
(3) Wash the pig bones, cut them into small pieces and put them in the pot, then add ginger slices, onion segments and appropriate amount of water.
(4) After the fire boils, remove the blood and floating foam, and simmer for 2-3 minutes until the bones are crisp and rotten.
(5) Add yam pulp into the pot, turn to high fire and boil, then turn to low fire and cook for 1 minutes, add mushrooms and red dates five minutes before taking out the pot, and then add appropriate amount of salt to taste.
2. Practice of mushroom soup:
(1) Preparation materials: Pleurotus ostreatus, Pleurotus eryngii, mushrooms, shrimp skin, chicken skeleton, green onions, medlar, red dates, ginger, cooking wine and salt.
(2) Wash and drain Pleurotus ostreatus, Pleurotus eryngii and Lentinus edodes, tear Pleurotus ostreatus into small pieces, break Pleurotus eryngii, slice Pleurotus eryngii, cut Lentinus edodes with a cross knife, wash green onions, slice with an oblique knife, and slice ginger for later use.
(3) Pour water from the pot, add chicken skeleton, green onion, ginger, medlar, red dates, cooking wine and salt to the pot, and then turn to low heat for about half an hour.
(4) Take another pot, pour the oil and shrimp skin into the pot, stir-fry until fragrant, and then put all the processed fungi into the pot and stir-fry.
(5) Finally, add the boiled chicken skeleton soup into the pot, cook for five minutes on high fire, and then turn to medium heat to continue stewing for half an hour.
3. Method of tomato soup:
(1) Preparation materials: tomato, shallot, ginger, garlic, pepper, salt, sugar, oil, oil consumption and pepper.
(2) Cut shallots into sections, slice ginger, peel and chop garlic, and wash tomatoes and cut them into small pieces for later use.
(3) Pour the oil from the pan, add the chopped tomatoes and stir fry when the oil is hot, then add the chopped onion, ginger, garlic and pepper.
(4) Stir-fry evenly, then turn to low heat and stew to make sauce, then add sugar, salt and oil consumption, and season according to your own taste. If you like sour, you can add less sugar or no sugar.
(5) After the seasoning is stirred evenly, pour the fried tomato sauce into the hot pot, add a proper amount of water, and add a little pepper to add fragrance after boiling.
