1. Put hairtail in water (the water should not cross the hairtail surface), and then add 1/4 teaspoons of salt. Wash the mucus on the surface of hairtail repeatedly with your hands in salt water, and then take it out (washing with salt water can remove the fishy smell and mucus on the surface of hairtail, and it is not easy to slip off when killing hairtail later).
2. Cut the tail of hairtail with scissors. Then use scissors to cut a small hole at the joint between the fin and the fish body. You can easily tear off the fin by gently tearing it along the small hole.
3. Cut a small hole with scissors at the joint between the fish head and the fish neck (be careful not to cut it). Hold the fish head and gently tear it, and the fish head and fish viscera can be easily torn out.
4. Cut the slaughtered hairtail into oblique sections with scissors. Scrape the surface of each hairtail several times with a knife (the purpose of scraping is to scrape off the mucus on the surface of hairtail, that is, to remove fishy smell, rather than scraping off the silvery white film on its surface).
5. Cut the belly of the fish with scissors. When you open the fish belly, you will find a black film inside. Tear off this film by hand (removing the black film can remove the fishy smell).
6. Finally, clean a small amount of blood in the middle of the fishbone with clear water to remove the fishy smell. Wash hairtail in clean water.
