1. Wash, peel and cut potatoes into cubes. Cut green onion into sections and slice ginger.
2. Cut black-bone chicken into small pieces
3. Heat oil in a pan and add anise and ginger slices.
4. Add chicken slices and fry until they change color, add half a spoonful of salt.
5. Add green onions.
6. Add potatoes and stir-fry for a while to fully absorb the oil.
7. Add two bowls of water.
8. Add one spoonful of light soy sauce, half a spoonful of dark soy sauce, and half a spoonful of salt. The first time you add salt is to add flavor to the chicken.
9. After the water boils, add the vermicelli.
10. Simmer over high heat for a while, then reduce to low heat and simmer covered for 20 minutes. Turn over several times halfway through. Do not burn it dry.
