Ingredients: 600 grams of pork belly, 10 grams of ginger, 5 pieces of garlic, 5 star anise, 1 tsp of pepper, 3 green onions, 2 tbsp of sesame oil. Seasonings: appropriate amount of salt, 5 tablespoons of soy sauce, 10 grams of rock sugar, a little black pepper, 1 tablespoon of wine.
Method
1. Wash the pork and cut into 3~4 cm pieces of the same size. Blanch the bleeding water with boiling water, drain and set aside.
2. Slice the ginger, smash the garlic with a knife, and cut the green onions into sections for later use.
3. Heat a wok, add 2 tablespoons of sesame oil, turn to medium heat and fry the ginger slices until the fragrance comes out. Then add garlic, green onions, star anise, and Sichuan peppercorns and stir-fry until the fragrance comes out.
4. Fry the pork until slightly yellow, add wine to remove the fishy smell, and add all seasonings.
5. Cook over low heat until the pork is colored, then add water until it is level with the pork. Bring to a boil over high heat, then turn to low heat and simmer for 20 minutes. Tips: Use rock sugar to season the meat when braised to make the meat juice thicker and the meat brighter and shiny.
In addition, if you want to make the braised pork more delicious, it is recommended to add these ingredients and braise it together with the pork. When the fat of the pork penetrates into these ingredients, it will not only relieve the greasiness but also make the whole food more fresh. The dish becomes 5 times more flavorful! 1. Potatoes that make you feel full. Potatoes make you feel full. They can also remove fat and have laxative and detoxifying effects. Even people who don’t like meat will fall in love with potatoes that are full of marinade. 1. Peel the potatoes, wash and drain, cut into 3 cm pieces and set aside. 2. Heat a frying pan, add 1 tablespoon of oil, add potato cubes and fry until slightly charred, add braised pork until half-cooked, turn off the heat when braised, and simmer for 10 minutes until the flavor is absorbed. Peel the white radish, wash it, cut it straight into 4 equal parts, and then cut it into large hob-shaped pieces. 2. It can be braised with meat until soft and can be eaten with rice. 1. Peel and wash the winter melon, cut into 4 pieces, slice the ginger, wash and soak the coriander in water for 10 minutes and set aside. 2. Heat a frying pan, add sesame oil and ginger slices, fry the winter melon until slightly brown, add seasonings and 1 cup of water and bring to a boil, then add braised pork until cooked and soft. 3.
