When making pork skin jelly, if you want to reduce the fishy smell, you should pay attention to the following points:
1. Soak the pig skin in cold water and cooking wine for 4 hours
2. Add pig skin, ginger, and scallions to cold water and bring to a boil. Chopsticks can pierce the pig skin.
3. Take out the pig skin, remove the remaining hair, and scrape off the grease attached to the pig skin.
4. Be sure to scrape until no white grease is visible (the most important step in removing the fishy smell). Cut the pig skin into shreds and wash it with water.
5. Knead repeatedly until the water is clear and oil-free.
6. Add water and pig skin in a ratio of 1:4 and cook. You can add some ginger and green onions.
