How to make Doudou Roast Chicken (Quick Hand)?
Rinse four chicken legs.
Cut into small pieces and drain.
Put the chicken pieces in a hot pan with cold oil.
Also prepare the condiments. (Ginger and garlic are available in supermarkets, which is very convenient)
Fry until dry and strain out. (I forgot to take a photo)
Heat up a pot of cold oil and immediately add ginger, onion, garlic, Sichuan peppercorns and dried chili peppers. (I prefer to add Sichuan peppercorns. If you don’t like it or don’t have it, you can leave it out)

Add beans. (I'm lazy, so it's convenient to buy washed green beans.)
Put water into the chicken. (I like the juice to be mixed with rice, so I put more.)

1? I am really afraid of oil splashing when the pan is hot and the oil is cold.
