Avocado Turkey Enchiladas
Recipe Description Avocados are full of cholesterol-lowering, heart-protecting, monounsaturated fats and vitamin E, and are rich in insoluble fiber.
Ingredients
3 tablespoons low-fat mayonnaise (mayonnaise), 1 tablespoon coarse-grained Dijon mustard (Dijonmustard), 2 Mexican wheat-flour tortillas (tortilla) 25 centimetres in diameter, 1 ripe avocado (avocado), peeled and cored and cut into long thin strips, 225 grams of sliced turkey breast, 340 grams of roasted red bell peppers from a can, drained and cut into thin strips. Cut into thin strips (or use home-roasted red bell peppers)
How to make it
1. Toss mayonnaise and mustard in a small bowl. Place burrito on cutting board and spread mayonnaise mixture evenly over burrito. Top with avocado, leaving 1.3 cm of space around the edge of the tortilla. Top with the turkey and bell peppers.
2. Place burritos tightly rolled on a cutting board, with the openings pressed underneath, cut both sides flush with a serrated knife, and cut each burrito into 6 equal portions. With the opening down, plate and serve.
