How to make fried (red) fries ?

Wash and peel the sweet potatoes. Then cut it into long strip shapes.

Mix the starch (or flour) seasoned with water and egg mixture. Coat the cut sweet potato strips in the mixture and then in the breadcrumbs. This can be repeated twice.

Pour in cold oil. Turn on the heat.

When the oil is hot, add the sweet potato fries coated with breadcrumbs. Remove when golden in color.

Use a strainer to remove some oil.

When loading the bowl, put a piece of absorbent paper or kitchen paper underneath to still wash off the excess oil. Allow to cool slightly before serving.
