The method of potato and egg fried sauce
Dice potatoes and onions, chop garlic into powder, and break eggs.
Heat the pan, pour a little oil, pour the broken egg liquid and stir it quickly with chopsticks, so that the scrambled eggs are small pieces. Bring it out and put it aside.
Cold oil in a hot pan won't stick to the pan (I use an iron pan, so it doesn't matter if you use a non-stick pan)
Pour the oil into the pot again, this time more than the usual cooking oil, add minced garlic and saute until the potatoes and onions are slightly burnt.
Stir-fry the sweet noodle sauce, add the scrambled eggs before, and add a tablespoon of soy sauce to make a splash. If it is salty, soy sauce can be replaced with water.
Drop a pinch of sugar and pour a spoonful of cooked oil before cooking.
Cooked oil is fried oil or scallion oil. This step was seen in a previous cooking program. Soaking cooked oil sauce will look oily and appetizing, and some meat dishes can also use this method.
