Friends living in the Northeast should be familiar with Korean spicy fish. This dish can be found in almost any cold noodle shop. The spicy fish dish shared by Megan today is spicy and sweet. , tastes very good. This Korean spicy fish dish is made from cod. Cod contains rich nutrients that our body needs and is a very good cooking ingredient. This summer dish is perfect for stimulating your taste buds.
Ingredients:
1 cod, 30 grams of wattle sticks, 2 grams of Korean thick chili noodles (you can add more if you like spicy food), 55 grams of cooking oil, 4 grams of salt, 12g steamed fish soy sauce, 10g sugar, 50g Sprite, 1g white pepper, 1 green onion.
Method:
1. Process cod. Cut off what is circled in the picture, remove the black membrane and internal organs from the fish, clean it and control the water.
2. Make hot sauce. Cut the two wattle sticks into small sections and beat them into chili powder with a food processor. Take a bowl or basin that is not afraid of being hot, and mix the Erjingjiao chili noodles and Korean thick chili noodles.
Heat the oil in a pot to 170 degrees, pour in the mixed chili noodles in several batches and stir evenly. Then add salt, steamed fish soy sauce, sugar, Sprite, and white pepper (freshly ground has a stronger flavor), stir evenly, and let stand for 30 minutes to allow the flavors to fully mix.
Cut the green onions into larger pieces. Add the scallions into the chilled chili sauce and continue fermenting for 30 minutes.
3. Steamed cod. Cut both sides of the clean and well-watered cod (for easier flavoring), apply a small amount of salt, put it in a steamer, and steam over low heat for 5 minutes after the water boils.
4. Spread hot sauce. Let the steamed cod cool down and spread the fermented spicy sauce evenly on it, and a delicious Korean spicy fish is ready.
Tips:
1. Erjingtiao is used to increase the aroma, and Korean chili noodles are used to increase the spiciness.
2. Personally, I think it tastes better if I add more sugar.
3. Do not cut the surface of the fish too hard, and the steaming time must not be long, otherwise the fish will fall apart.
4. If you don’t have whole cod, you can also make the kind of cod pieces sold in supermarkets.
