Guide to frog cleaning and cooking hot pot

Frog, as a delicious food, especially in hot pot, is irresistible for its fresh meat and unique flavor. But if you want to taste this delicious food, the first task is to clean the frog. In order to help you cope with this task easily, we have compiled the following detailed guidelines to make delicious frog hotpot easily.

Step 1: Choose fresh frogs.

Fresh frogs are the key to ensure the delicious hotpot. When buying frogs, please pay attention to their appearance and vitality. Fresh frogs have smooth and elastic skin, bright eyes and quick movements. Avoid frogs with dull skin, slow movements or wounds.

Step 2: Wash the frog.

Viscerating: first put the frog into the basin and rinse it with clear water. Then cut the frog's abdomen with scissors or a knife and take out the internal organs (including intestine, stomach and liver). Be careful not to cut the gallbladder to avoid bitterness.

Fascia removal: After viscera is removed, the fascia of frog thigh needs to be removed. Gently peel off the epidermis of frog thighs with your fingers, and then carefully remove the fascia with a blade or scissors. Move gently so as not to destroy the meat.

Repeated washing: after removing fascia, put the frog into the basin and wash it repeatedly with clear water until the water becomes clear, bloodless and impurity-free.

Step 3: Marinate the frog.

Clean frogs can be simply pickled to improve their taste. Put the frog in a bowl, add proper amount of salt, cooking wine, ginger slices and onion segments, stir well and marinate for about 30 minutes.

Step 4: Cook frog hot pot.

Prepare hot pot soup base: according to your own preferences, choose clear soup, spicy soup or other flavors of hot pot soup base, and heat the soup base in hot pot.

Boil frog: After the soup is boiled, pick up the pickled frog with chopsticks or colander and boil it in a hot pot. Frogs are tender and can be eaten after being cooked.

Dip seasoning: There are many kinds of dip ingredients in frog hot pot, which can be prepared according to your own taste. Common dipping materials are: garlic soy sauce, dry dish, sesame oil vinegar, sesame sauce and so on.

Tips:

When handling frogs, please wear gloves to prevent frog mucus from irritating the skin.

When cleaning frogs, use running water and a clean pot.

You can't marinate frogs for too long, or the meat will get old.

* When cooking frogs, don't overcook them, lest the meat turn into firewood.
