The preparation of tofu brain is as follows:
Main ingredients: 500g soybeans.
Excipients: appropriate amount of glucose.
1. Soak the soybeans in water the night before.
2. Put the soybeans directly into the soymilk machine and add about 1200 ml of water. You can use a wall-breaking machine or a food processor. It doesn't matter if it doesn't have a heating function.
3. After the soy milk is made, let’s filter the bean dregs. If you want a smoother taste, you can filter it again with gauze.
4. After filtering, the temperature of the soy milk will drop. We put it on the fire and then boil it. If the soy milk is made by a wall-breaking machine, it needs to be kept boiling for 4 minutes. The soy milk must be fully cooked and brought to a boil. Once done, turn off the heat and let it dry for three minutes until it reaches about 90 degrees.
5. Dissolve 3g of glucolactone in a bowl with water.
6. After the soy milk is cooked, there will be a layer of bean skin on the surface. Pick it up with chopsticks, then pour the soy milk into the glucolactone, cover it and let it stand for 10 minutes.
7. Wait ten minutes and the tofu curd will be ready.
