1. Chop carrots and celery into small pieces. Add the chicken broth, water, carrots, celery and black pepper to a large pot over medium heat. Add the oil to another small pot over medium heat and add the chicken and ginger and saute. Fry for about 5 minutes and then pick out the ginger.
2. Pour the chicken into a large pot, bring to a boil and add the noodles. Turn the heat to medium and cook for about 15 minutes, bring the noodles and vegetables to soften and serve.
