1, prepare raw materials.
2. Wash the glutinous rice.
Because what I do is a simple and easy way, I cook it directly with a rice cooker, so I don't need to soak the glutinous rice. If I use the steaming method, the glutinous rice will be soaked for about 4 hours in advance.
3. Put the glutinous rice into the rice cooker, add appropriate amount of water and cook it as cooked rice.
It is worth noting that the water should be put a little less than when cooking normally. As for the exact ratio of rice to water, the leaves are almost the same as when cooking normally, but the rice should not be cooked too soft, because the leaves are not cooked hard for the first time.
If you don't know the proportion well, you can also use steaming.
However, in case the glutinous rice is soft, it can be remedied, as will be said in the following tips.
4. After the glutinous rice is cooked, grind it with one end of a clean rolling pin.
This picture is my first time. The rice is too soft, so that the finished product behind it is not easy to shape.
If you make rice cakes, you need to grind them until there are no rice grains. If you make Ciba, there are usually some rice grains that will taste better.
To make rice cakes, it is actually very easy to put glutinous rice on a silica gel pad or a clean cutting board and grind it with one end of a rolling pin.
If you are making Ciba, you can put the glutinous rice into a relatively strong sealed bag and beat it with a rolling pin.
5, the crisper is covered with plastic wrap. In order to prevent sticking, put a little oil on the plastic wrap, then put the semi-finished product in, press it flat, and it is not easy to stick your hands after putting some cold water on your hands. You can also put some oil directly in the fresh-keeping box without plastic wrap.
Put it in the refrigerator for cold storage and molding.
6, cut into pieces is the rice cake.
7. Brush the oil in the pan and fry the sliced rice cake until both sides are yellow.
If it's Ciba, it has some rice grains. Cut it into slightly larger pieces. Restaurants are usually fried and greasy, so it is recommended to fry the leaves.
Whether it's rice cake or Ciba, you can fry it like this.
8. After frying, pour a little sweet osmanthus, which is very fragrant.
Tips:
In case the glutinous rice is cooked soft, you can also adopt the remedy:
First, add a proper amount of glutinous rice flour, but the taste will be slightly worse if you taste it carefully;
Second, or directly put it in the pot and fry a big cake, both sides of which are yellow. When it is hard and crisp, it can be sliced and eaten. This is more suitable for lazy dripping like leaves, haha ......
