Seasonings for braised salted duck with spring bamboo shoots: onion ginger, aniseed, fragrant leaves, dried tangerine peel, cinnamon, rice wine juice, soy sauce, soy sauce, crystal sugar and sesame oil.

1all two halves of salted duck are soaked in clear water (I soaked it all night) to remove the salty taste.

2. Peel fresh bamboo shoots and cut them into thick slices. Boil water in the pot and blanch the bamboo shoots for 2 minutes to remove astringency.

3. Chop the soaked salted duck into small pieces and drain the fresh bamboo shoots.

4. Cut the onion, slice the ginger and prepare the seasoning.
5. Heat the wok to the oil and add the duck pieces to stir fry.
6. Stir-fry for a while until the duck's oil comes out, then take out the duck pieces and pour out the fried oil.

7. Pour the oil in the wok again and saute all the seasonings.
8. Pour the duck pieces into stir fry.
9. Add the right amount of water.

14. Boil the fire and skim off the floating foam on it.
15. Then pour into a casserole and cook for 10 minutes.
