Ingredients: 1 crucian carp, 1 piece of tofu, and a handful of coriander.
Accessories: appropriate amount of ginger, appropriate amount of corn oil, appropriate amount of cooking wine, appropriate amount of salt, appropriate amount of chicken essence, appropriate amount of white pepper, and appropriate amount of green onion.
1. First clean the crucian carp and make three cuts on the front and back sides of the back.
2. Heat oil in a pot, add ginger slices and sauté until fragrant.
3. Add the fish and fry over medium heat until one side is golden.
4. When one side is golden, turn over and fry the other side.
5. Fry the other side until golden brown and then pour in the cooking wine.
6. Fry slightly and pour hot water.
