Steps
1. Chicken claw wash clean and chopped into two halves.
2. Chili pepper cut into rings, green onion cut into diagonal slices, ginger and garlic minced.
3. Chicken claws blanched with boiling water.
4. Then rinse with water.
5. Chicken claws into the pot, add appropriate amount of cooking wine and ginger, cook for 15 minutes until cooked through. It can be easily pierced in with chopsticks.
6. Cooked chicken claws with pure water to cool, and soaked in ice water for half an hour.
7. Soak the chicken claws into a container, add chili, green onion, ginger and garlic, soy sauce, vinegar, sugar and salt, mix well and refrigerate.
